Heat the olive oil over medium high heat in a skillet. Saute the
garlic for 1 – 2 minutes, but not brown it. Add the mushrooms. Cook an
additional 2 minutes, occasionally stirring. Add balsamic vinegar and
wine, stirring to mix in. Cook 2 more minutes. Use salt and pepper to
season. Serve with crackers or toast. This recipe makes 8 servings.
Stroganoff is a very popular and well loved dish. Usually it is made
with beef but in this vegetarian version, it is made by using Portobello
mushrooms. Most people cannot tell the difference between the original
and the vegetarian style. If they do notice the meat is missing, they
normally are amazed that the TASTE is NOT missing.
